*Ancient Asian Guru Renewal Soup*
INGREDIENTS:
2 cups sliced shitake mushrooms (use any brown mushroom, if you must)
1 cup thinly sliced scallions
2 tablespoons minced fresh ginger
1/8-1/4 teaspoon red chili flakes
8 cups reduced-sodium canned chicken broth
2 cups snow peas, cut diagonally into 3/4-inch pieces
1 lb. medium shrimp, peeled and deveined
1 lb. cooked Asian noodles (linguini will do just fine)
COOKING INSTRUCTIONS:
1. Combine shitake mushrooms, scallions, ginger, chili flakes, and broth
in a large saucepot. Place over high heat and bring to a boil, then turn
down to low and simmer for 8 minutes.
2. Turn temperature up to a boil and stir in shrimp and snow peas. Cook
for 2 to 3 minutes, until shrimp are pink and peas are bright green.
Drop in cooked noodles and serve immediately.
Makes four large entrée servings.
