Cynthia's Four-Cheese Dip
from Lafayette Hotel bar in Portland, Maine

5 parts cottage cheese
1 part blue cheese
1 part sharp cheddar (chopped)
1 part cream cheese
1 tablespoon or less chopped onion (to taste)
1 small glove garlic crushed
Tobasco Sauce (to taste)
Salt & Pepper (to taste)

To make it easy and a portion for a small gathering, you can just measure out
5 overflowing Tablespoons of the cottage cheese, then overflowing Tablespoons
each of the blue cheese, cheddar, and cream cheese. Add remaining ingredients.
Mix. Refrigerate. Enjoy. Spread on crackers, etc.

P.S. I put in several shakes of Tabasco.
